信陽板鴨是將鴨育肥增膘后，按照一定的生產(chǎn)工藝和質量衛(wèi)生標準制作而成。成品板鴨外型平整如桃狀，脫毛凈，無“天窗”，色澤白潤，肉質細嫩，尾油豐滿，鹽味適中，營養(yǎng)豐富，只重600-800克。遠銷港澳、日本和東南亞各地。香港九龍志強貿(mào)易公司經(jīng)理黎錦基說，香港人對板鴨的評價是：“造型美觀，肉細骨軟，咸淡適中，食味香濃”。
       
    1980年以來，羅山縣廟仙鄉(xiāng)，光山縣上官崗鄉(xiāng)，商城縣豐集鄉(xiāng)、鄢崗鄉(xiāng)、潢川縣雙柳鄉(xiāng)，淮濱縣馬集鄉(xiāng)，信陽市雙井鄉(xiāng)相繼辦起板鴨廠。1983年生產(chǎn)10萬只，出口3 萬只。1984年生產(chǎn)26.9萬只，出口12.3萬只。板鴨經(jīng)濟收益高，1983年光山上崗鄉(xiāng)板鴨廠加工板鴨22500只，盈利萬元；出口17400只，價值10萬元。1984年，信陽地區(qū)僅此一項即創(chuàng)外匯16萬元。



    Xinyang Dried Salted Duck is produced according to particular making skill and hygienic standards. The finished products are peach-shaped, white, fresh, plump, delicious as well as nutritious. Each duck weights 600 to 800 grams. These ducks have been sold to as far as Xianggang, Aomen, Riben, the south-east of Asia and many other districts.
      
    From 1980, many dried salted ducks mills were established gradually in many villages such as Shangguangang, Fengji, Yangang, Shuangliu in Huangchuan County, Maji in Huaibin County, Shuangji in Xingyang City. In 1983, the quantity of products was 100,000 and that of export was 30,000. In 1984, the quantity of products was 269,000 and that of export was 123,000. These ducks brought high economic benefit to Shanggang Village in Guangshan County with the income of ￥110,000 in 1983 and ￥160,000 in 1984.
