新密市大隗鎮生產的一種名特高級點心。其生產歷史悠久,解放前大隗鎮有惠蘭齋、恒昌德和福源長3家生產,逢年過節人們圍門爭購荷葉酥。遠銷各地,享有盛譽。它用蜂蜜、白糖、玫瑰和植物油做餡,用精粉、水和植物油和面做皮,工藝十分精巧。成品潔白無瑕,餅為20層左右,薄如白紙,緊緊相貼,裹著透明晶瑩半流質的糖餡,形若荷葉。餡兒扯絲,久而不滯,透亮如膠,甜而不膩,味美爽口。
Dawei Lotus-leaf Pastry
Dawei Lotus-leaf Pastry is a superior dessert produced in Dahuai, Xinmi city. It has a very long history and a high reputation so that it has been sold to many far places. Before the establishment of the People’s Republic of China, there were 3 famous workshops producing this dessert, they were Huilanzhai, Hnegchangde and Fuyuanchang.
It is made up of stuffing and cover, the stuffing is made by honey, white sugar, rose leaf and vegetable oil, and the cover is made by flour, water as well as vegetable oil. The finished products are pure, paper-liked thin even though it has almost 20 layers, coherent tightly between layers, lotus leaf-liked shape. Besides, the sugar stuffing is crystal, sweet but not excessive. Thus it has not only nice appearance but also delicious flavor.
