河南商丘大有豐醬園創(chuàng)始于清代順治年間,距今已有三百年的生產(chǎn)經(jīng)營(yíng)歷史。由李大有字豐年者所首創(chuàng),故名。
明朝末年,清兵南下,李大有五世祖由金陵名容(今江蘇句容縣)逃至安徽亳州,做染布生意,兼營(yíng)醬菜。至李大有一代,商運(yùn)通達(dá),生意興隆。清道光年間傳至其孫,門(mén)市分“春陽(yáng)齋”、“紫陽(yáng)齋”、“大有豐”、“大有厚”四處經(jīng)營(yíng)。大有豐遷至歸德府城,專(zhuān)營(yíng)醬菜。之后,大有豐雇用師傅孟春發(fā),吸取南北二州(亳州、濟(jì)寧)之精粹,精心研制,制作出的醬菜獨(dú)具一格,馳名中州。因此,民謠云:“南有紫陽(yáng)齋,北有玉堂齋,中有大有豐,三家好醬菜。” “南有紫陽(yáng),北有玉堂,歸德大有豐,醬菜美名揚(yáng)。”解放后,大有豐收為國(guó)有,1953年,改為商丘縣醬醋釀造廠,1956年改為商丘縣釀造廠,使醬菜生產(chǎn)有了進(jìn)一步發(fā)展。品種多達(dá)四十余個(gè),主要產(chǎn)品有醬瓜、醬筍、醬黃瓜、醬包瓜、醬八寶菜、五香大頭菜、豆腐乳、西瓜醬豆、油辣醬豆等。
白糖豆腐乳:用料講究,火功適度,工藝嚴(yán)謹(jǐn)。采用優(yōu)質(zhì)大豆、醬曲面、紅曲米,加入食鹽、天然醬油、白糖、料酒及花椒、元茴、小茴、肉桂、丁香、陳皮、白果、良姜等佐料,經(jīng)過(guò)制坯、前酵、后酵等工藝操作而成。該產(chǎn)品塊狀,呈正方形,大小均勻,形狀整齊,質(zhì)地細(xì)膩,不糟不爛,色澤金黃微赤,內(nèi)外如一,咸淡適口,味道鮮美,具有五香酥乳之濃郁香味和開(kāi)胃增食之功能。
醬瓜:采用當(dāng)?shù)靥禺a(chǎn)女瓜,沿襲干醬璜培菜制作工藝培制而成。產(chǎn)品為橢圓片狀,大小勻稱(chēng),色澤金黃發(fā)亮,味道鮮美,脆嫩可口,咸中有甜,醬味濃郁。
五香大頭菜:選當(dāng)?shù)禺a(chǎn)鮮芥疙瘩,沿襲傳統(tǒng)工藝,跨越兩個(gè)年頭,長(zhǎng)達(dá)六個(gè)月方能制成。該產(chǎn)品塊似桔瓣,色澤棕褐,柔中有脆,咸度適中,并含芥得鮮味。
油辣醬豆:選用優(yōu)質(zhì)黃豆,經(jīng)過(guò)蒸煮、發(fā)酵工序,加入香油、花生仁、白糖、曲酒、辣椒面等輔料制作而成,產(chǎn)品黏稠適度,色澤棕紅,油光掠影,稍有辣味,可調(diào)劑飲食,增進(jìn)食欲。
大有豐醬菜上世紀(jì)50年代已出口至朝鮮、英國(guó)。白糖豆腐乳等產(chǎn)品已被評(píng)為商業(yè)部?jī)?yōu)質(zhì)產(chǎn)品,并成為饋贈(zèng)親友的禮品。1986年著名相聲大師侯寶林先生吃后贊道:“長(zhǎng)江以北獨(dú)此一家。”
Dayoufeng Pickles
Dayoufeng Pickles are created in Shunzhi period of Qing Dynasty in Shangqiu, Henan province 300 years ago. It is named in this way for its founder is called Li Dayou, whose another name is Li Fengnian.
Dayoufeng Pickles has more than 40 kinds of products such as pickled muskmelons, pickled bamboo shoots, pickled cucumbers, eight-treasure pickles, fermented bean curd and so on. All the pickles are made according to strict making standards and elaborate technique so that they are in good flavor and smell.
Dayoufeng Pickles are exported to North Korea and England in 1950s. Among the various products, fermented bean curd with sugar has been appraised as Quality Product by the Commerce Department and become a good choice for relatives and friends as gift. In 1986, the famous crosstalk master Hou Baolin has ever praised it that it's the only one in the north.
